We’ve come a long way since the 1950s. Haikee (海记, Hai Ji) first began along Upper Cross Street where my grandad sold steamed chicken rice in push carts. He soon concocted his own soy sauce recipe and made it unique to our family.
Hai Kee was established in 1959 by Mr Wong Si Han whom originated from Hainan, China and came to Singapore in search for better living. He first started the business, along Upper Cross Street, by pulling a bullock cart serving chicken rice to coolies, junk boat captains and business merchants. Life was tough but as he persevered, he subsequently managed to secure a stall on the same street selling Suy Sauce Chicken.
It was then that business, flourished and he decided to use “海记,” “Remembrance of the Sea” as the brand ame in commemoration of the journey and hardship he went through.
Fast forward to 2017. In a bid to attract younger generation consumers and keeping up with trends, Hai Khee underwent a major rebranding which emphasises our objective to serve the authentic recipe to consumers at affordable prices. It is also the brand’s desire to cater to all ages and functions be it for the old or young, gathering among friends or families.

Most of our customers remember us. They’d say: “Aren’t you guys from Upper Cross Street? My parents used to always buy from you.” It makes me smile knowing that we’re playing a crucial role in the lives of others and it’s not just an eat-and-go situation.
As much as possible, we want to honour past hardships and memories. My dad, who first took over from my grandfather, managed to secure a small stall. At first, he didn’t even have enough money to change our signboard, resorting to a plain red cloth for recognisability. It’s the reason why red is still prominent in our current one today.
